Unicorn Muffins

Okay, let me start this off by saying that I am not a food blogger.   Yes, I have a blog and a lot of what I post is about nutrition, but I try to stay more on the motivation/behavior change side of things.  That being said, I’m in the mood to share one of our favorite recipes - Unicorn Muffins! I mean, you can make these into any shape that you want, but we just happen to have some left over silicone unicorn molds from last year’s birthday festivities.

This recipe is a perfect example of how our family practices balance. Some people think that because I’m a health coach, we don’t bake or eat any “treats”. This couldn’t be farther from the truth! We’ve just make adjustments to some of our favorite foods so that they work for our bodies, rather than against them.

Ingredients

  • 1 egg

  • 1 C uncooked oatmeal

  • ⅓ C honey

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 C mini frozen blueberries

  • ¼ tsp cinnamon

  • ¼ t salt

  • 1 tsp vanilla

  • ¾ C whole what flour

  • 4 T coconut oil

  • 1 C plain Greek yogurt

  • ¼ C milk

  1. Preheat oven to 375 degrees

  2. Whisk together yogurt, milk, egg, vanilla, and honey.

  3. In a different bowl, mix oatmeal, flour, baking powder, baking soda, cinnamon, and salt

  4. Add yogurt and coconut oil to dry ingredients being careful not to over mix

  5. Grease mini muffin tins and fill each ½ way. Or all the way to the top and then some if you’re a toddler. Bake for 11 minutes (14-17 minutes for full size)

  6. Let cool in plan for 10 minutes, and place on cooling rack


The yogurt gives these the muffins some nice moisture and the oatmeal gives it a nice hearty texture. And the honey, cinnamon, and blueberries make them easy to eat. REALLY easy. Our family devours these for breakfast, snacks, and dessert with no remorse whatsoever. So throw an apron on the kid, get messy, and enjoy some better for you muffins.
